I would use "this [day] indicating the non passed day of any given week. Eg it it was Wednesday I wouldn't use 'this Tuesday' until the start of a new work week.

Sometime in the 80's, before I was born, they switched the holiday to friday from sunday, to coincide with the actual Holy Day of Islam, with other weekend on Saturday. They switched back to sunday in the 90s, but to me, the day would always start on Sunday.

Irritates the hell out of my wife as I see it the same way your wife does. Next anything is the next occurrence of that thing. So today being Saturday, next any day of the week will be the one coming up. If I say this Friday, that should mean the Friday that happened in this current week, which was yesterday, as it is part of a collection of days in this current week which we are still in.

And to answer the original question, I would say it depends. If you say a week from now, that's seven days from now as there's no possessive group to start from. However, next week always begins on Sunday. In your real world example you are creating collections of weeks that begin on a Wednesday and in that particular instance, next week would begin on Wednesday. But this is a very specific circumstance in which you are collecting 84 days together and breaking them up into 12 equal parts.

Weird. I'd never ever use the word "this" referring to a day in the past. Unless I used a past word like "this last Friday".

This week is anything in the current Monday-Sunday cycle. Next week is anything in the following cycle. This Thursday is always the following Thursday. Next Thursday is the Thursday after that, but I'll generally be pretty clear that I don't mean this Thursday to avoid confusion. "We're going for dinner not this Thursday, but next Thursday" or "We're going for dinner next week on Thursday."
