Okay, I haven't even looked into doing this, so I don't know what programs it involves, and if they are legal. If not, then just delete this.
There are a handful of games, like Shadow of the Colossus, that have a great soundtrack, or one really great songs. I've looked on iTunes and it's not there. Is there a legal way to use the game disc to extract the song?

Doubtful, especially for console games. You can always check places like Play Asia for official soundtracks if you're really interested.

A lot of games with good soundtracks count on selling it separately, so I would think they would make it nigh impossible to rip it out yourself.
Never tried it with consoles, but the only games with easily yoinked music are generally the PC games that have tracks laid out in MP3 or like formats already.

Here's Shadow of the Colossus (http://www.amazon.com/Shadow-Colossus-Earth-Kow-Otani/dp/B000BKJHOY/ref=pd_bbs_sr_1?ie=UTF8&s=music&qid=1223061045&sr=8-1), but damn is it expensive to import....
I'm fairly certain it's illegal to rip.
As an aside, if you like that soundtrack check out ICO as well.

The Shadows of the Colossus soundtrack is great stuff, but you'll have to import it if you want to get it legally. I was not so strong...

Having to import titles sucks. When is a record company finally going to let us order locally ala carte. Let me pick the tracks, but them to an audio CD from a high quality recording and send! Get on it Japanese labels!
