I'll start a list, people always look for games that are just good to play for various consoles. I basically rent anything that's a good singleplayer game but won't offer much beyond that, unless its something that I must have the minute of release, so this list isn't about singleplayer. It's the multiplayer that keeps us coming back to a title.
So title, and what qualities it carries. I guess I'll update the list with things that you guys find are worthy.
360 -
Halo3 (FPS) - Solo and Splitscreen Multiplayer and Story mode, both local and online. Vehicles included, some small maps, some large. Very large gameplay variation, and you can create your own gametypes.
Forza 2 (Racing) - Local Split Screen, Solo Online Multiplayer. Most extreme vehicle customization to date I believe, take your creation online. It's a racing simulation, either you'll love it or you'll hate it.
Platform Independent -
Call of Duty 4 (FPS) - Local Split Screen or Solo Online Multiplayer. No vehicles, but probably some of the best/tightest FPS controls on any console, wide weapon selection. Perks also mix up gameplay a bit. Leveling up character unlocks new weapons.
Battlefield: Bad Company (FPS) - Sadly, only solo online multiplayer, but its worth it. Only online FPS with realtime piece by piece building destruction and vehicles such as tanks and helis. Game really takes on new levels when you have a good and reliable squad mate. Leveling up character unlocks new weapons. Some very large maps, with objectives that could take a while for your team to complete. Very team work oriented.
